The Waterford Whiskey Trail is a two-day journey through a county of makers: crystal cutters and distillers, farmers, and bartenders, storytellers and chefs. You’ll discover what happens before whiskey reaches the glass, what makes a great pour memorable once it gets there, and why Waterford gives the whole thing such a strong sense of place.

Expect hand-cut crystal, Viking streets, brilliant bars, estate-grown grain, working stills, great food and, because this is Waterford, a spectacular finish beside the sea.

At the heart of Waterford’s modern whiskey story is Waterford Distillery at Grattan Quay. The site’s drinks heritage dates back to 1792, when William Strangman established a brewery here on the River Suir. More than two centuries later, that legacy took a new direction with the creation of Waterford Distillery, where Irish-grown barley, provenance and place became central to the whiskey story. Waterford Whiskey went on to earn international attention for its focus on grain, farm and flavour, carrying the Waterford name to whiskey lovers around the world. Now, under new ownership since 2026, the distillery is entering an exciting new chapter, making it a fitting place to begin a trail that celebrates Waterford’s past, present and future through whiskey.

Day 1: The City Pour: Crystal, Characters & Great Whiskey

Waterford City is perfect for the first chapter. Take your time, wander at your own pace, and let Waterford reveal itself as you go. With everything close at hand, each short stroll leads to another great story, flavour or discovery.

Start With the Glass

Begin at House of Waterford on The Mall.

Before worrying about what goes into a whiskey glass, spend some time discovering how Waterford makes the glass itself. Watch expert craftspeople mould, blow, cut and finish crystal by hand, browse the whiskey glassware and, if the mood takes you, check out the new House of Waterford VIP Experience which offers an exclusive behind-the-scenes journey, complete with a private guided tour, the chance to cut your own piece of crystal, complimentary engraving, and a celebratory drink at the Waterford Bar.

Whiskey, Wakes & Medieval Waterford at The Reg

From The Mall, step straight into the heart of Waterford’s Viking Triangle and into a place where the city’s history is quite literally built into the walls.

The Reg is wrapped around Waterford’s 900-year-old medieval city wall, so this isn’t just somewhere to stop for a whiskey; it’s a chance to sit, sip, and soak up centuries of Waterford history in one of the most atmospheric corners of Ireland’s oldest city.

Head into Lily Poole’s Parlour for the Whiskey & Wake Experience, a wonderfully Waterford take on Irish whiskey, storytelling and tradition. And the history doesn’t stop when the tasting does. Explore The Reg’s medieval surroundings, where sections of the ancient city wall and its original arches still run through the building, then stay for lunch, and take some time to wander the Viking Triangle outside and pop into O’Sullivan’s for your next dram.

Right in the heart of the Viking Triangle, this is the kind of place you walk into for one drink and end up staying much longer. Take a break from the whiskey trail with lunch at Momo, an award-winning Waterford favourite, known for fresh, locally sourced ingredients, bold flavours and a relaxed, welcoming atmosphere. It’s the perfect place to refuel before heading on to the next stop.

Let the Bartender Choose: Go Off-script at Revolution

Next, make your way towards the Apple Market and step into Revolution Craft Beer & Whiskey Bar, where choosing a whiskey is part of the experience.

With more than 400 Irish whiskeys to explore, this is the place to be curious. Try a Waterford-produced whiskey, discover an Irish classic you’ve never tasted before, or go completely off-script with something unexpected.

Take your time, compare flavours and enjoy the sheer variety behind the bar. You might find a new favourite, discover a style you never knew you liked, or simply come away with a better sense of just how varied Irish whiskey can be.

Put Waterford on the Table

From Revolution, continue along John Street to Bodega, where the trail shifts from tasting to dining.

With a strong selection of Waterford Whiskey behind the bar, this is the perfect place to slow things down and enjoy whiskey alongside good food. Choose a pour that catches your eye, pair it with something delicious from the menu, and let the flavours do the talking.

Whether you stop in for a few plates or settle in for dinner, Bodega adds a different dimension to the trail: relaxed, sociable, and all about enjoying Waterford Whiskey in the middle of a great night out in the city.

Finish with a flag, a final dram, and a great Waterford story

End Day 1 on the quays at the Granville Hotel, where whiskey and Waterford history come together beautifully.

The hotel is the birthplace of Thomas Francis Meagher, the Waterford man who first flew the Irish Tricolour in 1848, giving you one last story to raise a glass to as the day winds down. Settle into the Thomas Francis Meagher Bar, explore the impressive whiskey selection and enjoy a final dram surrounded by a little piece of Waterford history.

Then let the evening take over. Stay for dinner, linger over another drink and enjoy the atmosphere of the quays after dark. There’s no need to rush; the best way to finish the trail is simply to settle in and soak up the culture and heritage of Ireland’s oldest city.

Stay & Sip: Make a Night of It

And when the last glass is poured, Waterford has plenty of ways to turn Day 1 into a proper city break.

Stay right where the trail finishes at the Granville Hotel for history and a prime quayside location, or choose the Tower Hotel if you want to be close to the Viking Triangle and the heart of the city’s historic quarter. For a more relaxed riverside stay, the Waterford Marina Hotel is a lovely option, while Dooley’s Hotel, a warm and welcoming family-run hotel on Merchants Quay, brings a friendly, personal feel to a city stay. The Fitzwilton Hotel offers a stylish, contemporary base, with comfortable rooms, good food, and easy access to the trail.

And if you feel like extending the escape a little further, head just beyond the city to Faithlegg, where a Georgian country-house setting, great food, and a whiskey or cocktail in Bar 1783 make a wonderfully indulgent way to round off the Waterford experience.

However you choose to stay, the idea is simple: don’t make Waterford a day trip; give yourself the night.

Day 2: The Waterford Whiskey Road Trip: Seed, Side Pour, Stills & Sea

With a few tastings planned, let someone else take the wheel. Book a local driver, minibus or tour operator for the day, and check TFI Local Link Waterford too; it can be a great way to connect some of the towns and villages along the route.

Then settle in and watch Waterford unfold around you: rolling farmland, historic estates, rivers, country roads, working stillhouses, and eventually, the Atlantic coast.

First stop: Curraghmore Estate in Portlaw, where the whiskey story begins long before the bottle is opened.

Here, it starts with the land. Curraghmore’s Single Estate Whiskey is rooted in cereals grown on the historic estate itself, giving you a rare chance to connect what’s in the glass with the fields it came from.

With a pre-booked whiskey experience, this becomes the trail’s true Seed to Sip moment, a chance to hear the story of the estate, the grain and the people behind it before tasting the whiskey for yourself.

After the buzz of the city, Curraghmore feels like a complete change of scene: sweeping landscapes, centuries of history, and a much closer look at where flavour really begins.

Side Pour: Take the Fun Detour

On the journey west, make Dungarvan the optional stop at Dungarvan Brewing Company.

The brewery’s tour currently runs for around 60- 90 minutes and ends with a guided tasting of three beers.

This isn’t about pretending beer is whiskey. Quite the opposite. It’s a chance to look at familiar building blocks -grain, water, yeast, and fermentation — and see them head off in a completely different direction.

Stills: Step Inside Blackwater Distillery

From there, continue west to Ballyduff and Blackwater Distillery, where the whiskey story comes to life in a completely different way.

This is your chance to get right behind the scenes of a working distillery to see the stills up close, take in the sights and aromas of production, and hear directly from the people who are making the spirits.

After exploring grain, provenance and place earlier in the trail, Blackwater brings everything together. Suddenly the process is no longer something you’ve read about or tasted at the bar; it’s happening right in front of you.

Head for Ardmore and finish your Waterford Whiskey Weekend at the spectacular Cliff House Hotel, perched above the Atlantic.

After two days of whiskey, stories, history, craft, and discovery, this is where you slow everything down.
