Everett’s restaurant was established in April 2018 by head chef Peter Everett. The restaurant combines exceptional, modern Irish cooking with historic and atmospheric surroundings and a friendly and professional service. The restaurant has been awarded a Michelin Bib Gourmand since 2022, recognising high standards of food and service at a great value price. The kitchen uses the best of the South-East’s produce and has benefitted from building strong relationships with local suppliers. Diners can choose from the two dining rooms. In the Front Room you will be surrounded by the history of Waterford. The room has elements in it that date back to at least the 1460s and has been identified as the 15th century house of the eleven times mayor of Waterford James Rice. The historic and intimate Wine Vault is ideal as a private dining room for your special occasion, or equally perfect for a romantic meal for two.
