Georgina Campbell Visitor Attraction of the Year 2023 and recommended in McKenna’s Guide 2026 for its Estate-to-Plate philosophy, the Stables Café at Mount Congreve brings its garden-led approach to the festival through a shared-table experience rooted in season, place, and conversation.
Guests will begin with lunch by Head Chef Jean-Baptiste Du Bois, shaped by Mount Congreve’s 350-metre Estate-to-Plate philosophy — the literal distance from the Stables Café to the Walled Gardens — where what grows on the estate, and how far it travels, truly matters. The menu will celebrate seasonal, local produce and is designed to be generous, simple, and honest.
Following lunch, guests will be invited to remain for a relaxed and thoughtful panel discussion on food, place, and purpose in contemporary Irish cooking. JB will be joined by Estate Director Ray Sinnott and retired LA Times food writer Russ Parsons, a long-standing admirer of Mount Congreve. With Georgina guiding the conversation as MC, the discussion will be informal yet considered, exploring how gardens, producers, chefs, and critics influence how — and why — we eat as we do today.
This is not a demonstration or a lecture, but an opportunity to listen, reflect, and enjoy good food in good company — rooted in place, shaped by season, and shared around the table.
